Savoury Herb Oatmeal

Start your morning right with this trendy savoury oatmeal. Accented with herbs and topped with a hard‑cooked egg, this oatmeal will be a hit with the whole family.

Ingredients

  • 4 packets (28 g each) Quaker® Regular Instant Oatmeal
  • 2 2/3 cups (650 mL) skim milk
  • 1/4 cup (60 mL) shredded white Cheddar or mozzarella cheese
  • 2 tbsp (30 mL) chopped fresh parsley or chives, divided
  • 1/2 cup (125 mL) halved cherry tomatoes
  • 1/2 cup (125 mL) diced cucumber
  • 2 hard‑cooked eggs, quartered
  • 1/4 tsp (1 mL) each salt and pepper

How to make it

  1. Cook oatmeal with milk in individual microwave‑safe bowls according to package directions. Stir 1 tbsp (15 mL) cheese and 1 tsp (5 mL) parsley into each serving.
  2. Top each serving with cherry tomatoes, cucumber and half an egg. Sprinkle with salt, pepper and remaining parsley.


Tip: Serve with hot sauce if desired.
Tip: Top with leftover cooked chopped vegetables, such as broccoli, asparagus or squash.
