Mini Pizza Meatloaves

Ingredients

  • 1-1/2 pounds 80% lean ground beef
  • 1-1/4 cups pizza sauce, divided
  • 3/4 cup Large Flake Quaker® Oats or Quick Quaker® Oats (uncooked)
  • 1 egg, lightly beaten
  • 1 teaspoon dried oregano leaves
  • 1/2 teaspoon salt
  • 1/4 teaspoon garlic powder
  • 3/4 cup (3 oz.) shredded reduced‑fat mozzarella cheese

How to make it

  1. Heat oven to 400°F.
  2. In large bowl, combine all ingredients except 3/4 cup pizza sauce and cheese; mix lightly but thoroughly. Press approximately 1/3 cup meatloaf mixture into each of 12 medium muffin cups.
  3. Bake 15 to 20 minutes or until thermometer inserted into centre registers 160°F. Remove meatloaves from oven.
  4. Top each with 1 tablespoon pizza sauce and 1 tablespoon cheese. Bake 3 minutes or until cheese is melted. Remove meatloaves from pan and serve.
